I made Katie her first batch of cookies. Okay, so I should probably not really call them cookies since they aren't very sweet and are rather healthy for her. But then, what really constitutes a cookie?
At the park on Thursday I was amazed by all the junk food that the parents and caregivers were giving the children. The easy solution to keep a child happy is to give them some chips or super-sugary cookies. I refuse to give Katie that junk food. However, I need something that I can take with us for little snacks when we go out besides fruit and vegetables. So I decided to make my own cookies.
I love to bake so this was a fun task. White sugar has absolutely no nutritional value, so I knew I didn't want to include any in the cookies. I also didn't want to use any oil, so I found ways to get around that as well. Instead of oil, I added applesauce (applesauce without any sweetener added). Instead of sugar, I added a chopped up apple. Good thing Katie likes apples.
The cookies were simple. I mixed in rolled oats, DHA organic baby oatmeal, applesauce, apples, whole wheat flour and some nonfat milk. Katie seems to love the cookies and I don't feel bad about giving her one. They are actually pretty tasty though not very sweet.
